Why do I need to bring my deer in quartered only (as of 2019 deer season)?

Due to Chronic Wasting Disease (CWD) is a neurological disease in deer, elk, moose and other members of the deer family, known as "cervids." 

What time do you begin to accept deer and how late will you accept deer?

We cater to our customers! For deer season we are open from 8 a.m to 8 p.m.  each day. If our customers will need to bring a deer in before or after we close, we encourage you to give us a call, to arrange drop off. What sets us aside from many is, you speak to a live person, not an automated system. If we miss your call please call us right back! We enjoy talking to each and every customer!

Is my meat kept separate from other orders?

Yes! We process 1 deer at a time and in the order we receive them. 

How do you perfer I bring my deer in?

Butcherman's Gourmet Sausage has a policy section, click on Processing tab. Each deer must be quartered, tagged,  in iced cooler and proof of sex.  We will assist with unloading, rinse and return your cooler. 

If the game was gut shot or otherwise hit in an area that produced a lot of tissue damage, it’s best to trim away any damaged flesh. 

Please call before bringing game in for further instructions if needed. 

How long does it take to process my deer?

Your deer are checked in, in numerical order. We encourage you to give instructions at the time of drop off. Usual processing time is 7 to 10 days, although it is usually finished sooner. If we haven’t called you within 10 days please check with us – the order may be ready. 

Is a deposit required?

Yes, a $60 deer processing fee is required which only includes cuts, packaging, and freezing. There are additional cost for spices (jalapeno, cheese, etc), ground meat, tenderizing, sausage, summer sausage, hamburger patties, etc. 

Do you sell wild game?

No. It is illegal to sell in the state Texas. We custom process only, we cannot sell.

What are the minimum weights for sausage?

An order of  25 lb  (per flavor sausage) 

What do you do with bones after processing?

We have a company which recycles inedible items such as our bones. The residuals collected (bones) are used to produce nutritional and customizable fats and proteins by the company and are used in the production of biodiesel and renewable diesel for bio-energy. This industry has become a leader in North America, by offering optimal efficiency for a more sustainable world.   


Bioenergy is renewable energy made available from materials derived from biological sources  

Biodiesel refers to a vegetable oil- or animal fat-based diesel fuel consisting of long-chain alkyl esters. 

Do you sell wild game bones & are they machine cut?

No, please come on in. They are free! That's right we give away our bones. They are going to a recycling company, if our customers would like to come grab a few before the recycle company picks up, please do so!


No, we do not machine cut our bones. Only on request. 

FAQ's Catering

What exactly do you cater? Any side dishes?

At Butcherman's Gourmet Sausage we only recognize our catering section as, providing a service to our customers. We will smoke meats for you at $2 a pound. All meats must be fully thawed.


We do not cater sides. Nor do we go onsite as of yet to bring items to a location. All meats must be brought in for smoking.

We would like to have a turkey, ham, goose, or multiple meats smoked, when may I schedule?

We recommend to contact us 7-10 days in advance to place you on our calendar. All meats must be thawed fully before placed in smokers. 


We enjoy smoking for any and all events! We would love to be part of your occasion!

We have a half frozen turkey & will need it ready by the holidays. May I bring it in last minute?

We recommend advance notice. We do cater to our customers. However, in this case we may not have it ready in time. Keep refrigerated and bring your turkey in asap. As we will place in our cooler and place in smoker when turkey is thawed. We can not promise the turkey will be ready in time, but we will try! 

How long does it take to smoke my turkey?

Generally, it will take 5-6 hours to smoke.

Will I need to provide my own disposable containers?

No, Butcherman's Gourmet Sausage will provide the required items needed to transport your smoked meats. 

How will I know when my items are completed or ready?

The mode of contact will depend on the direction from our customer. Usually by phone call. 

Will we be able to schedule types of catering on a calendar online?

Yes, a calendar will be available for our customers to begin utilizing. 

We are new to the online system and are excited of the new transition along with the online store.
